Course overview
This course provides information and guidance for licensed nutrition professionals to work in a culturally competent manner as they provided services to patients or clients from English-speaking Caribbean islands. Specific nutrition concerns are highlighted as well as food-ways and appropriate approaches for primary prevention and care. Over 8 million Caribbean migrants reside in the United States and their health and nutrition needs can not be met if providers remain uninformed on their food, cuisine, health beliefs and practices.
