Course overview
Medical nutrition therapy is an essential component of the treatment of HIV/AIDS. Over the past 20 years, research has clearly shown the relationship of nutrition to immune function, opportunistic infections, progression of the disease and, most importantly, quality of life. This course investigates the relationship of HIV, the immune system and nutrition. Topics covered include: the HIV virus; declining immune function; immunity and the HIV virus; free radicals, antioxidants oxidative stress and HIV; the GI tract; nutrients to maintain immune function; weight and body composition; opportunistic infections antiretroviral therapy (ART); nutritional assessment of HIV/AIDS patients; pregnancy, HIV and AIDS; food safety; and nutrition counseling and intervention.
