Course overview
Plant foods have numerous health benefits including fiber, low calorie content and an abundant source of micronutrients and phytochemicals. They encourage satiety and help with bowel health. Increasing evidence shows that dietary fiber (soluble and insoluble) plays a multifactorial role in the battle against cardiovascular disease. Yet most Americans consume less than half the recommended intake and don't recognize the importance of dietary fiber. This course provides information about the health benefits of fiber to encourage others to increase intake of fiber-rich plant foods.
