Course overview

Vegetarianism comes in many forms and various levels of food avoidance. Because of this, the term "plant-based diet" better encompasses the different diet patterns of vegetarianism and the degree to which animal products are avoided. Religion, health, animal rights, and economic status all contribute to an individuals decision to follow a plant-based diet pattern. When meals are well-balanced and thoughtfully planned, plant-based eating is appropriate for all populations of people. This course will utilize scenario-based learning to explore the types of plant-based diet patterns, potential micro- and macronutrient deficiencies, and counseling considerations for healthcare providers. The goal of this course is to educate registered dietitians/nutritionists and health education professionals in the acute care setting on the fundamentals of plant-based diets.
